Muffins

My son is a freshman at Gunn High School in Palo Alto. He has chosen Food as a subject, something I find awesome! This recipe was handed out by the teacher and he made the muffins at home this morning. He used a mix of different chocolate chips; butterscotch, white, and semi-sweet. With great success.

Small comment: The recipe is filed under the Breakfast section of his binder. My son (as being Norwegian in the US) found this quite amusing. In Norway, muffins are a sweet threat eaten on special occasions, like birthday parties. Never ever would we eat this for breakfast back home:-) But hey – we are not in Norway anymore. Enjoy your breakfast!

WHAT YOU NEED

Makes 12

  • 1 3/4 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2/3 cup sugar
  • 1 beaten egg
  • 3/4 cup milk
  • 1/4 cup cooking oil
  • 1 cup chocolate chips

HOW TO

Start by settting the oven to 400°F.

Mix the dry ingredients in a bowl.

Make a well in the center. Combine egg, milk and oil, and add to the well of the dry ingredients. Stir just until moistened (batter should be lumpy). Fold in chocolate chips.

Fill paper bake cups 2/3 full, preferably in a cupcake tray.

Bake for approx. 16 minutes or until golden.
